Ingredients
225g Self raising flour
75g Golden or white caster sugar
1 tsp Baking Powder
125g Butter cut into cubes
1 Medium sized egg
150g Dried fruit
1tblsp Milk
2 tsp Vanilla essence
Method
Preheat the oven to 180°c / Fan assisted160°c / Gas 4
Mix the flour, sugar and baking powder in a bowl or food mixer, add the butter and rub/blend until the mix looks like a crumble topping. mix in the dried fruit.
Beat the eggs, milk and vanilla together in a clean bowl and add to the dried ingredients. Stir/blend until the mixture binds together like a lumpy dough. Add a splash more milk if the mix is too dry and crumbly.
Place a really heaped dessert spoon sized lump of the mix onto a grease proof lined baking tray or silicone mat (if you have one). Leave a little space between each one as they may spread a little when baking and possibly double in size.
Bake for 15-20mins or until golden brown and firm to the touch. Remove from the oven and allow to rest for a few minutes before placing on a wire cooling rack to cool completely. sprinkle with caster sugar before serving.
n.b Will keep in an airtight container for up to 3 days.
